Hollandaise Sauce Recipe
1 cup butter
3 egg yolks
2 tablespoons lemon juice or tarragon vinegar
¼ tsp cayenne pepper
1 tablespoon water
2 tablespoons of chopped tarragon
Melt butter and separate the white solids
Place yolks, lemon juice, water, and pepper into the vitamix.
Start on speed 1 and slowly increase to 10, then to high.
Blend for 1 minute. Slowly pour butter in and continue blending for 2 minutes.
(Add more lemon juice if the sauce is too thick)
Pour into bowl and add the optional tarragon.
