Vitamix Soup Recipes
The Vitamix high performance blending machines are an excellent choice to make hot soups. The blenders are so powerful that they use frictional heat to heat up the liquids within the blenders.
Below is a demonstration on how easy it is to make soups in a Vitamix Blender. In addition, below the video presentation are some soup recipes you can enjoy.
1 lg head broccoli
1 med onion
2 cloves garlic
½ cup cashews
2 cups water
1.5 tsp bullion
2 tsp olive oil
Chop garlic and onion, and steam for 5 minutes. Cut broccoli into florets.
Add broccoli to the steamer and steam for another 5 minutes (continuing to steam the garlic/onion as well). While the broccoli is cooking, add the cashews, and bouillon to the blender.
When the broccoli is done, save a few small florets for a garnish.
Add broccoli, onions, and garlic into blender, along with 2 cups of hot water. Use the steaming water, plus however much more you need. Vitamix will heat soup, but it may be more practical to add hot liquids.
Run the blender on high for about 30 seconds, or longer if you need it to heat the soup. Serve, garnish, and enjoy!
2 Tbsp olive oil
1 small onion
1 clove garlic
½ tsp dried oregano
½ tsp dried thyme
28-oz can tomatoes (ideally packed in juice)
1 cup water
¼ cup raw cashews
salt and black pepper to taste
Chop onion and garlic – if you want to use your Vitamix for this, cut onion into quarters and remove skin, then drop into Vitamix while running it at speed 4. You can drop the garlic clove in as well. Heat a medium-large pot on medium-high, add the oil, then sauté the onion and garlic. After a few minutes, add the oregano and thyme. Once the onions start to turn translucent, add the tomatoes and water. Bring to a boil, then simmer for 5 minutes.
Add cashews to blender then pour in soup from pot. Ramp the speed up slowly—in ~5 seconds—then blend at high until very smooth; ~60 seconds. Season to taste with salt and pepper.
Garnish with extra-virgin olive oil and ground black pepper, or with a fresh herb of your choice.
For a thicker soup, you can also add a slice of bread along with the tomatoes.
1 cup hot water
2 tbsp nutritional yeast
½ tsp paprika
½ tsp cumin seeds
½ tsp beef bullion (or better than bullion)
1 stalk celery
1 tsp olive oil (to prevent bubbling)
1 clove garlic
4 roma tomatoes
Blend tomatoes, garlic, olive oil, carrot, celery, bouillon, cumin, paprika, yeast and hot water for 1 minute. Then add a pinch of cilantro and blend at speed 4 for a few seconds. Then add black beans. (Heat black beans in microwave for 30 seconds before adding to mixture)
Garnish with remaining cilantro and croutons or tortilla strips
