Vitamix Hummus Recipes


2 cups cooked chickpeas
¼ cup bean cooking liquid or water
1 clove garlic
½ cup hulled sesame seeds
¼ cup extra virgin olive oil
salt and pepper to taste
juice from 1 large lemon (if your lemon isn’t large you may want to have another on hand in case you want to add more to taste).

Blend on high and use the tamper to make sure it circulates well. Taste it and add flavorings to your liking. You can adjust the consistency by adding more liquid or oil if you want it to be thinner.

Hummus Red Pepper

1/2 cup water
6 ounces roasted red pepper
black pepper and salt to taste (up to 1 teaspoon of salt)
½ cup tahini paste
2 Tablesp olive oil
2 cloves peeled garlic
2 ½ Tablespoon lemon juice
3 cups garbanzo beans, drained
1 teaspoon hot sauce
1 teaspoon cumin

Place all ingredients into the Vitamix container and secure lid.
Select Variable 1.
Turn machine on and slowly increase speed to Variable 10, then to High.
Blend for 1 minute using the tamper to press the ingredients into the blades, until smooth. Add additional water if necessary to keep mixture flowing freely through blades.
